EXECUTIVE PASTRY CHEF


Our client, an iconic resort in Florida with more than ten outlets and extensive banqueting requires an experienced Executive Pastry Chef who will be responsible for the complete pastry department and oversee its operations. The Executive Pastry chef has to have exceptional organizational and leadership skills besides being creative. He/she must demonstrate from his/her previous employment his ability to run a super-efficient department offering the maximum level of guest satisfaction and profitability in an atmosphere of high employee morale (Please note: Not in Orlando but on Florida coast)


KEY RESPONSIBILITIES


  • Oversee the production of pastry related items for all restaurants and banqueting
  • Ability to produce and organize all pastry cooking classes
  • Oversee the design and production of wedding and special cake orders
  • Direct and guide the pastry culinary team in all aspects of production and service
  • Responsible for budgeting, ordering and all financials including cost for the department
  • Hazard Analysis Critical Control Point (HACCP) compliant and experienced
  • Responsible for Scheduling, training of all personnel in the department
  • Ensure compliance by all culinary personnel with Company and departmental rules, policies, and procedures
  • Excellent communicating skills within the department and able to build relationships


QUALIFICATIONS

  • Creative and strong background in Pastry, Bakery etc.(restaurants/hotels and top end bakeries' experience preferred)
  • Great attention to detail, almost close to perfection
  • Excellent presentation skills and communication with staff, management and customers.
  • Strong problem-solving skills
  • Ability to work in a multi-cultural environment
  • Good team player and work in a fast-paced environment


EDUCATION AND EXPERIENCE


  • Bachelor’s degree in Hotel/Restaurant Management, Business Administration, or a related field preferred (Accredited Executive Pastry Chef program preferred).
  • Minimum of five (5) years of experience as an Executive Pastry Chef preferred.
  • Experience in a union environment a plus (Preferred)
