JOB TITLE: Moonbeam Chef

DIVISION: Food & Beverage

REPORTS TO: Food & Beverage Director

LOCATION: Moonbeam Lodge

CLASSIFICATION: Full-Time/Seasonal/Hourly

 

PURPOSE OF POSITION: The Moonbeam Chef runs and oversees kitchen operations, in an effort to provide guests with well prepared, beautifully plated food so that they have a memorable and enjoyable dining experience.

 

SPECIFIC JOB REQUIREMENTS:

  • 1-2 Years of experience working as a Chef or Kitchen Manager
  • Formal Culinary Training/Degree preferred
  • Thorough knowledge of line equipment and kitchen equipment and operations, including uniforms, linens, etc., for both FOH and BOH
  • Proven ability to manage food costs and stay within necessary budget
  • Extensive experience in sourcing, pricing and ordering product for fine dining
  • Excellent communication skills and ability to hire, train, manage and work with all FOH/BOH staff
  • Experience in working as an Expediter
  • Creativity and ability to assist Food & Beverage Director in menu development
  • Food Handler’s Certification

 

JOB DUTIES AND RESPONSIBILITIES:

  • Hire, train, schedule and manage kitchen staff to ensure proper coverage and see that all responsibilities are being met
  • Work directly with Yurt Chef, Breakfast Staff, Bartender, FOH Staff, etc. in ordering necessary product for restaurant
  • Thoroughly price and source the best product possible for the best price possible
  • Work directly with suppliers, purveyors and representatives to make sure orders are placed when necessary so there is no interruption in food service
  • Receive all orders to ensure items are in order and properly stored in dry storage, walk in, freezer – ensuring proper rotation as well – keeping kitchen and all storage areas clean and organized
  • Coordinate and ensure linens, rugs/mats, uniforms, etc. are consistently ordered and delivered
  • Communicate regularly with FOH staff regarding service, menu details, special requests, customer needs, etc.
  • Work as the liaison and Expediter during service to manage the window and communications between FOH and BOH
  • Provide excellent customer service to guests by checking in with their table to ensure they are satisfied with their meal and service
