Job Description

LUX is looking for a passionate, energetic, creative and organized Executive Pastry chef to join our team! We at LUX strive to make as many items from scratch as possible and need someone to share who shares the same passion! The Executive Pastry Chef must have a wide range of experience with baking tools, ingredients and techniques. They will be delegating the bakery staff to create bulk quantities of baked items from scratch according to the production timeline, and company standards.


The Pastry Chef will work directly with the Executive Chef to create new menu items, production lists, product development and ordering.


Responsibilities:


  • Cooking and preparations of bread, cakes, pastries and other items.
  • Take initiative to complete tasks according to a daily timeline. 
  • Maintaining proper inventory of prepped products and ingredients.
  • Maintain and sanitize baking utensils, tools, implements and machinery.
  • Keep the bakery clean and organized.
  • Recipe development.
  • Adhere to food safety laws and standards while preparing bakery products.
  • Ensure quality control of all food items before it leaves the bakery.
  • Training of new bakery personnel on recipes and LUX standards.
  • Create daily and weekly production lists in alignment with each BEO.
  • Attend Production and BEO meetings weekly and collaborate with executive chef on product ordering and needs.


Qualifications:


  • Desire to give attention to detail when it comes to multitasking for multiple events.
  • Must have Servsafe certification.
  • Ability to create beautiful dessert plating that coincides with LUX design and aesthetic.
  • Substantial experience with pastries, breads and cakes. 
  • Ability to read through and understand Banquet Event Order
  • Understand quantities sold vs quantities made for each event.
  • Proper time management
  • 5-10 yrs. experience in high volume food production
  • Catering experience, hotel, or multi-unit production experience preferred.
  • Previous pastry chef and management experience preferred.
